Sundried tomatoes are made from ripened regular tomatoes or a local, pomodori-like variety, common in the islands across the Aegean Sea. These are left to dry in the sun until the water within evaporates. The tomatoes can lose up to 93% of their volume after drying process.
In order to produce 1kg of sundried tomatoes,14kg of fresh tomatoes is needed. Sundried tomatoes have the same nutritional value as fresh ones – that is, extremely rich in lycopene, antioxidants and vitamin C.
Tip: Best served with olive oil, rosemary, basil and garlic.The flavor of sun-dried tomatoes is intense and slightly salty. Many enjoy eating sundried tomatoes as a snack, especially children. Although they are delicious with pasta, you can also use sundried tomatoes in breads,salads and meat dishes.
